Description : Complex. Aromas and flavors swirl around each other. This is a Port made to accent the fruity ripe flavors of the grapes. Plus, we used our own brandy with all its intense flavors of a fine cognac.

Serving Ideas: With ripe Stilton, macadamia nuts, after dessert, by itself with a good book. Port is such a classic.

Miles and Marko's Winemaking Notes : It all started with late harvest Cabernet Sauvignon & Petite Sirah. Sweet and wonderfully flavorful. We partially fermented them to extract their flavors and color and at one point infused the fermenting must with our own double distilled spirits to arrest the fermentation and save the remaining natural sugar from fermenting out.

So far, this is almost a classic Port production technique, but with a Charbay twist! The infusing spirit we used was not one but a blend of five varietal Brandies, four of which are over 10 years old:




  • Folle Blanche Brandy
  • Black Muscat Grappa di Marko
  • Pinot Noir Marc
  • Gewurztraminer Marc
  • Freshly double-distilled Cabernet Sauvignon Brandy


The calculated amount was added to make a finished Port of 20% Alcohol by Volume. Now we have 5 Spirits with 5 powerful personalities revolving around the intense Cabernet and Petite Sirah wine.

After aging in French Oak barrels, the result is far more complex and fruity than ports made with mere high proof. Unfiltered for bottling. With a cork for long aging.
