Distill grappa from leftover pomace? Not at Charbay.

Miles and Marko, our family's 12th and 13th generation winemakers/distillers, chose exception merlot grapes, fermented and gently pressed them to get the pomace needed for this European classic spirit.

The grappa was double-distilled by hand to 140 proof in our family's classic Alambic Charentais Pot Still. Our Still is 1000 gallons and is made from 2 pieces of copper. It weighs approximately two tons. We aged the grappa in stainless steel, then in glass, to retain the pure flavors before cutting with ultra-purified rainwater to 40 % alcohol. Old World distilling techniques and time create a delightful perfume of the fruit. Grappa di Marko is a brilliantly clear, intrepid Eau de Vie with the fragrance of merlot, a silky smooth texture and a mirage of sweetness characteristic of only the rarest of hand, double-distilled Grappas.

Named after our son, Marko, this is a single barrel release of a one-of-a-kind Grappa.

(Our next release, not set to be released anytime soon, will be a Pinot Noir.)
