Back in 1989, prime Pinot Noir and Sauvignon Blanc grapes were sourced & fermented right at Charbay. They double-distilled this fresh wine in their Alambic Charentais pot still. It went right into French oak barrels and settled into the cellar where it was watched over for 24 years. A lot happens in the world in 24 years. Yet the brandy was undisturbed. Occasionally Miles or Marko would walk through the library of aging barrels and pull a sample. They kept an eye on it and followed its aging. But 24 years later

It's all by hand - no machine makes the cuts or changes the flow from one tank to another. To make supreme brandy, there are 7 cuts made - 7 separations of flavors coming from the still. "Knowing how to make your cuts separates the men from the boys," Miles used to say. Of course Susan distilled beside him for years but she and the rest of the family were trained by Miles and all followed his strict guide lines with when to make 'cuts', how it was coming along and when the next batch would need to go into the preheater. It's an art form & heritage that the family is proud to carry on.
This is a family that isn't in a hurry to rush their brandy out the door. There will be more fruit brandies released from the library when the family sees they are ready. And they love single & double barrel releases. "We want to share the individual flavors of a barrel or two... they evolve on their own timeline," says Miles. "Blending barrels of brandy is also an art but that's for the big boys who have to meet flavor profiles. We are free to share the uniqueness."
