Miles and Marko whole-berry fermented the grapes in 1-ton fermenters, doing 'punch-downs' every 4 hours - something you need to live on-property to do!
They paired the wine with Charbay's own Alambic Charentais brandy: a 4 year-old barrel-aged 100% Syrah. The port was then barrel-aged for 7 years.
Very few ports are made in Napa Valley. Charbay is the only (and probably one of the few in the U.S. to distill its own brandy to make port.)
Tasting Notes: Plump jammy flavors of the wine in its youth and toasty vanilla of the brandy have combined & settled down to mature to a medium body, semi-dry richness
Serving Suggestions: Enjoy with macadamia nuts or a rich chocolate-raspberry dessert. (A glass of Still House Port with a cigar by a fire is one of our favorites.
How to Open: This port has a bartop. Score the wax 1/4” below the top and circle around the bottle to cut all the way through the wax. Twist the bar top while twisting the bottle in the opposite direction.
