Marko and Miles were thrilled to connect with a California family that was growing acres of pomegranates. Their grove is just 4 hours south of the Charbay Distillery.

Marko stays in touch with the grower, tracking the ripeness. At the peak of the season,  the ripe pomegranates are picked, crushed and loaded onto Marko's truck to rush them to the Distillery.

Marko then starts the six-month extraction process. It's then integrated into Charbay's award-winning Clear Vodka. 

The juice we use is so fresh that all the earthy ripe flavors carry though into the vodka. One person said it tasted so fresh that their mind expected the seeds.

This vodka is made in the lighter style, designed for sipping and also making delicious cocktails.

Within hours of harvest, M & M began fermenting the fresh pomegranate juice. The fermentation was arrested with Charbay's own pot-distilled Pinot Noir brandy, aged in French oak. The flavors open with bright, tart and sweet flavors, capturing the earthiness of fresh pomegranates.

2 oz. Charbay Pomegranate Vodka
2 oz. POM Pomegranate Juice
Juice of 1 whole lemon
2 splashes of Fees Lemon Bitters

Rosemary Sugar Rim:

1 cup sugar
1 tablespoon fresh rosemary, de-stemmed
(Blend until smooth consistency)

Directions:

Wet the edge of the glass with lemon juice, place rosemary sugar on a flat surface and roll the rim.  Add ice, then blended drink.

As featured all April (Earth Month)at Auberge du Soleil Resort, Napa Valley; a portion of its sales will be donated to the Napa Valley Wine Trail – an environmentally-conscious walking/biking trail extending from the Vallejo Ferry terminal to Calistoga.

Charbay Pomegranate Fizz

2/3 Charbay Pomegranate Dessert Wine
1/3 sparkling wine or tonic

Pour the wine into a tall flute; top with sparkling wine or tonic; garnish with a lemon wheel or twist

Charbay Green Tea Brunch

2/3 Charbay Green Tea Aperitif 
1/3 fresh lemonade (or champagne) to taste

Pour on the rocks; add a lemon twist; add lemonade or champagne to taste. (Note: the aperitif is wine-based –a nice option for those who prefer to stay with wine)

CHARBAY Pomegranate Cosmo

1.5 oz. CHARBAY Pomegranate Vodka
1/2 oz. cranberry juice
1/2 oz. Cointreau

Combine ingredients in a shaker with ice; shake until frosty and strain into a martini glass; add a squeeze of lemon & garnish with a lemon wheel

CHARBAY Moroccan Cocktail

2 oz. CHARBAY Pomegranate Vodka
½ oz. cardamom-infused simple syrup*
½ oz. lemon juice
½ oz. pomegranate puree (Perfect Puree), or pomegranate juice

*Cardamom Simple Syrup - Bring 1 cup of water and a ¼ cup of whole cardamom to a boil. Stir in 2 cups of sugar - stir until fully dissolved. Remove from the heat and allow to cool; keep in the refrigerator for 3 days, then remove the cardamom.


Combine all ingredients in a shaker full of ice; shake until frothy and garnish with an orange twist.(Recipe courtesy of Angele Restaurant & Bar in Napa, CA)
